To make 1 x 900g [2lb] loaf, you need...
3 large ripe bananas [over-ripe are even better]
225 g [8 oz] self-raising flour
175 g [6 oz] caster sugar
100 g [4 oz] butter
2 eggs
2 tablespoons of golden syrup
1. Heat oven to 150 C / 300 F/ gas 2.
2. Peel bananas, put into large bowl with butter, eggs, golden syrup.
3. Use potato masher to mash it all together
4. Sieve the flour and caster sugar into the bowl. Fold into mix with potato masher or spoon.
5. Grease the 900 g [2lb] loaf tin
6. Put into oven and bake for 1 hour 15 minutes until risen and firm to touch.
7. Leave to cool down for 10 - 15 minutes [or more] then turn cake out of the tin.
8. Eat as a warm pudding or leave to cool and eat later.
